Sushi with gentle ingredients

Ingredients:

Cooked and cooled quinoa or brown rice or cauliflower rice (as per cooking instructions)

Avocado, sliced

Carrot, thinly sliced

Cucumber, thinly sliced

Bell peppers, thinly sliced

Nori sheets

Sharp knife

Instructions

  • Cook quinoa according to package instructions and allow it to cool.
  • Mix a slice of avocado into the cooled quinoa/ brown rice/ cauliflower  to achieve a sticky rice texture.
  • Lay a sheet of nori on a clean surface.
  • Spread a thin layer of the quinoa sticky rice mixture evenly over the nori sheet.
  • Arrange thinly sliced carrot, cucumber, and bell peppers in one corner of the nori sheet.
  • Carefully roll the nori sheet tightly, starting from the corner with the vegetables, until you reach the other end.
  • Use a sharp knife to slice the sushi roll into individual pieces.
  • Serve with low salt coconut aminos sauce, wasabi, and pickled ginger if desired.
  • Enjoy your homemade quinoa sushi rolls!
