·       3 cups rolled oats

·       ¼ to cup unsweetened, unflavored plant-based milk

·       6 medium apples, peeled, cored, and sliced (6 cups)

·       2 tablespoons lemon juice

·       ½ cup unsweetened applesauce

·       ¼ cup pitted dates, chopped

·       ¼ cup apple cider

·       1 tablespoon + ¼ teaspoon apple pie spice

·       2 tablespoons maple syrup

 

For the Topping:

·       2 tablespoons no-salt-added almond butter

·       2 tablespoons white whole wheat flour

 

 

Instructions 

  • Preheat oven to 350°F.
  • Prepare the pie crust: Combine soaked dates, 2½ cups rolled oats, and salt in a food processor. Gradually add milk until the dough comes together. Press the dough into a 9-inch pie pan.
