Ingredients:
- 1 medium zucchini, julienned or spiralized
- Handful of cherry or grape tomatoes, halved
- Small handful of alfalfa sprouts
- 1-2 leaves of basil, chiffonade (thinly sliced)
- Juice of 1/2 lemon
- 1/4 avocado, diced
- Sprinkle of hemp hearts (optional)
- Pinch or two of red pepper flakes (optional)
- Himalayan salt, to taste
- Freshly cracked black pepper, to taste
Instructions:
1. Prepare the Vegetables:
- Julienne or spiralize the zucchini and place in a medium-sized bowl.
- Halve the cherry or grape tomatoes and add them to the bowl.
- Add the alfalfa sprouts and basil.
2. Add Avocado and Seasoning:
- Dice the avocado and add it to the bowl.
- Squeeze the lemon juice over the vegetables and avocado.
- Sprinkle with hemp hearts and red pepper flakes if using.
- Season with Himalayan salt and freshly cracked black pepper to taste
3. Serve:
- Gently toss all ingredients together to combine.
- Serve immediately
