Zucchini Pasta Salad

Ingredients:

  • 1 medium zucchini, julienned or spiralized
  • Handful of cherry or grape tomatoes, halved
  • Small handful of alfalfa sprouts
  • 1-2 leaves of basil, chiffonade (thinly sliced)
  • Juice of 1/2 lemon
  • 1/4 avocado, diced
  • Sprinkle of hemp hearts (optional)
  • Pinch or two of red pepper flakes (optional)
  • Himalayan salt, to taste
  • Freshly cracked black pepper, to taste

Instructions:

1. Prepare the Vegetables:

  • Julienne or spiralize the zucchini and place in a medium-sized bowl.
  • Halve the cherry or grape tomatoes and add them to the bowl.
  • Add the alfalfa sprouts and basil.

2. Add Avocado and Seasoning:

  • Dice the avocado and add it to the bowl.
  • Squeeze the lemon juice over the vegetables and avocado.
  • Sprinkle with hemp hearts and red pepper flakes if using.
  • Season with Himalayan salt and freshly cracked black pepper to taste
3. Serve:
  • Gently toss all ingredients together to combine.
  • Serve immediately
