Ingredients:

1 Tsp Lemon Juice

1 Small Beetroot

1/2 Cucumber

1 Small Onion

Few pieces capsicum

Tender Coconut or 1/2 cup melon seeds

Ginger small piece
Instructions:
1. Grate the beetroot and ginger.
2. Finely dice the onions and capsicum.
3. Grind the tender coconut or soaked melon seeds with lemon juice and cucumber to create the raita base.
4. Add the chopped ingredients.
5. Prepare a dry tadka with mustard seeds, chili, and curry leaves.
6. Mix everything well.
7. Serve fresh.
