Ingredients:
- 4 ripe bananas, sliced and frozen
- 1 cup frozen blueberries
- 1/4 cup unsweetened almond milk (or any plant-based milk)
- 1 tsp vanilla extract (optional)
- Fresh blueberries and banana slices for topping (optional)
Instructions:
1. Prepare the Bananas:
- Peel and slice the ripe bananas.
- Place the banana slices in a single layer on a baking sheet and freeze for at least 2 hours or overnight.
2. Blend the Nice Cream:
- In a high-speed blender or food processor, add the frozen banana slices and frozen blueberries.
- Pour in the unsweetened almond milk and add the vanilla extract if using.
- Blend until smooth and creamy, stopping to scrape down the sides as needed. If the mixture is too thick, add a bit more almond milk, one tablespoon at a time, until you reach the desired consistency.
3. Serve
- Scoop the nice cream into bowls.
- Top with fresh blueberries and banana slices if desired.
