Banana Blueberry Nice Cream

Ingredients:

  • 4 ripe bananas, sliced and frozen
  • 1 cup frozen blueberries
  • 1/4 cup unsweetened almond milk (or any plant-based milk)
  • 1 tsp vanilla extract (optional)
  • Fresh blueberries and banana slices for topping (optional)

Instructions:

1. Prepare the Bananas:

  • Peel and slice the ripe bananas.
  • Place the banana slices in a single layer on a baking sheet and freeze for at least 2 hours or overnight.

2. Blend the Nice Cream:

  • In a high-speed blender or food processor, add the frozen banana slices and frozen blueberries.
  • Pour in the unsweetened almond milk and add the vanilla extract if using.
  • Blend until smooth and creamy, stopping to scrape down the sides as needed. If the mixture is too thick, add a bit more almond milk, one tablespoon at a time, until you reach the desired consistency.
3. Serve
  • Scoop the nice cream into bowls.
  • Top with fresh blueberries and banana slices if desired.
